Most analogue new car

Although no longer sold in the UK but still available new in Australia, the Hyundai i20N probably fits that bill.
Manual gearbox.....check
Physical buttons for most functions.......check
Proper handbrake.......check
Permanent turn off for lane assistance......check
One button for stop start.....check
Conventional easy stalks for lights and wipers.....check
EDIT: 5 door, room for the family when you go somewhere and also geat fun when there not with you.

I also feel that Mazda offer what I like to think of as modern, old cars.
I have an mx5 ND2. It has a touch screen which I never use other than keeping it set on Nav with the map showing. You can easily turn off things like lane departure warning and traction control at the touch of a button. I just leave them alone as they don't bother me.
If you want a family size car then you could always look at the Mazda3, cx30, cx5 etc. The Mazda3 in particular I like because..

As others have said, the MX5 is very analogue so perhaps try another from the Mazda range big enough for your needs.
In the ND2 MX5 I turned the lane keep assist off when I first got it - and it stays off! No need to do it again every time you start the engine.
Also Mazda are famously known for being focused on weight saving, so one of their regular hatches may feel more engaging and responsive.
Alternatives would be the i30 or i20. I think the i20 has a digital screen dash but the i30 is dials etc (at least the N versions are).

Will depend on OP's budget and real world appetite for mingebagery, I expect.
Was disappointed to notice that FIAT have withdrawn the mingebag Tipo from UK sale whilst pondering the OP's ask. I like those. Astonished to see the range down to essentially 3 models - 500, 600 and Panda. Wow.
