Best way to back up from google photos

Open Google Photos in a browser and go to Settings, Export your data, Backup
From Google Takeout and you can export all your Google content to a series of zip files. I think you receive an email when the zip has been created and is ready to download.
I'm not sure but it is possible that by default Google only keeps compressed versions of your photos so you may not get the full size originals in your download.

With Google Takeout you can chose to have Google Photos (and/or other Google Data) copied to Google Drive, OneDrive, Dropbox or Box. Downside is most frequent interval is every 2 months but that is better than nothing and could compliment another solution.

Get a NAS, download the photos as zips, as discussed.
Then install immich https://immich.app/ on your NAS set this up to automatically backup your photos form your phones etc. This will then create a backup along side google photos without you ever having to think about it. I think most NAS systems have similar software for doing this.

Depending on what you want, and how much ongoing involvement you want;
Simply download the files to your computer and you have a single point in time backup. However you'll need to download any new ones periodically to keep your local drive up to date. This is very easy to do, just select the photos and Shift + D to download as a zip file. You can copy them again to an external HD, or do whatever you like with them to keep them secure.
Or get something like a Network Attached Storage, which is basically a personal cloud. You leave it plugged in and switched on at home, and it works exactly like any other cloud storage, and will update the photos as you take them in the same way as Google Photos will. The easiest to use is probably Synology BeeStation, which is designed to be user friendly, but you can get far more functionality by getting a proper NAS, like their DS223j which will duplicate your data across 2 disks, can be used as a CCTV camera recorder, and loads of other things.
