Hotels across Wales for a road trip

I’m use to going to Wales for mountain biking trips with the “guys” and slumming it in b&b or outdoor style hotels and hostels but fancy doing a car road trip from south to north in the summer with the wife as part of my 40th birthday present to myself. Has anyone got any recommendations for nice hotels - did stay at Porteirolion a few years ago which was lovely

I've heard that from colleagues.I quite fancy trying the Harbourmaster in Aberaeron for a weekend with my best friend. My OH and I go there regularly for fish and chips and a walk around the harbour.
Will be starting in Essex with a plan to drive straight across to FOD area up the m4 for the first day of activity. Want to do a bit of fun activities and sit seeing as well (think castles, walks, bounce below). Thinking of a Monday to Friday to avoid some of the summer rush so looking at only 1 to 2 nights in the same spot.

Near to Bala, one of the nicest places I've ever stayed, not cheap but worth it.
