I’ve really developed a taste for this recently. They sell a little jar of it in my local Tesco and I find myself picking one up when I pop in for milk etc.

But it’s a convenience store, and at £4 for a little bit of what is essentially, cabbage is a bit silly to be buying that all the time.

Where else can you get it? Any recommendations for the good stuff?

Much cheaper to make it yourself if you can be bothered. Get yourself some jars ordered.

My Sainsburys has this. Not bad but im no connoisseur..

I would be looking at online or an Asian supermarket if you want a decent amount. Or even to make it.

I haven't tried their kimchi, but loved the jalapeño relish that they do.

Yeah, like that Sainsbury's one too. Waitrose do a decent one also.

Not an enthusiastic cook so unlikely I'll be making my own. Might look for the Korean shops in my city.

Making it is easy. You just chop and salt the vegetables, mix in the spices, and put it in an appropriate container to rot ferment for a bit.

Fundamentally, yes. Lactofermented cabbage. Doesn't taste the same, but same concept.

Kimchi is dead easy to make - Mrs Loto knocks the stuff out and I love it.

Red cabbage, rice wine vinegar, sugar, chillis, other bits (only she knows) and some chopped coriander - ferment for a bit and then serve.

Nothing better with some air fried Cumerland Sos and a fried or poached egg

Oh my, that sounds righteous!

I bloody hate cooking. I might have to make an exemption for Kimchi, looks like it's fairly expensive everywhere. How does one know how much fermenting to do? Or is it like pickling where it just lasts for years.

Until it is as sour as you like it really, then refrigerate to slow further development.

It is piss-easy to make yourself, but I do like the Vadasz options, occasionally on offer at supermarkets.

There's a 1Kg catering size, from Brake's:

I do make a lot of fermented food including kimchi (cabbage, daikon, watermelon and others). Very healthy and yummy. Takes a little bit of time to make but it is very rewarding. I make large batches so I have enough for a year supply.

I suppose its like when Burger chains in America tried to introduce the 1/3 pound burger and people rejected it as they thought the 1/4 pound burger was bigger. Because 4 >

And on further investigation, the Brakes Bros offering isn't a KG anyway. It's four x 250g. Which isn't the same thing at all!

Imagine the disappointment waiting for your behemoth kimchi to arrive, most likely on a pallet. And then the postman just hands you a packet with four little tubs in it. You'd be wounded.
