"Stroll" isn't even their real name, it's actually Strulovitch. It seems rather bizarre that they go by a fake surname.

Not really, plenty of people do it in various contexts for various reasons.

You go by DOCG for example.

A lot of celebs have a real name and a stage name.

Esteban Ocon = Esteban Ocon-Khelfane

Lance Stroll = Lance Strulovitch

Carlos Sainz Jr = Carlos Sainz Vázquez de Castro

Sergio Perez = Sergio Perez Mendoza

Alex Albon = Alex Albon Ansusinha

Gabriel Bortoleto = Gabriel Bortoleto Oliveira

It's just like Hollywood actors using screen names instead of their real names, etc

Lots of immigrants do it as many face discrimination through the prejudice of their surname.

Others do it for personal branding and marketing reasons to engage with their target audience.

In all of those examples it's their real name, just not their full name. I'm sure you can see the pattern when it comes to Spanish names.

sometimes people alter/change their name for business/brand reasons. Simpler/catchier/easier to remember/easier to spell/a million reasons.

That applies to the entertainment industry, not sport and business.
