I've just eaten a massive Rump steak, its been in the fridge for a week or so and was nicely brown.

Now, 15 minutes later, I'm experiencing hallucinations around the edges of my eyesight?!!?!?

As it happens, beef protein contains a fair bit of tryptophan, which is chemically related to some rather interesting chemicals, including acid. I'd be a bit surprised if you could carry out interesting conversions just by leaving beef in the fridge though.
