what taco seasoning mix are you all using please?

I normally make my own. Works out much cheaper and nicer.

Cumin
Oregano
Chilli
Garlic salt
Salt
Paprika
Onion powder
salt and pepper.

Quite like the "Santa Maria" ones, they are easy to find and unlike the Old El Paso packets actually have some flavour and a bit of heat - even the medium is a bit hot for the mrs.

I do similar - I use garlic powder rather than garlic salt though and I used smoked paprika. And a bit of sugar too.

I think this was the initial recipe I followed. It works excellent with prawns or as a base for creamy cajun chicken pasta.

OEP really gone down the swanny in the last deacde, bland sweet crap for the masses. When tex mex began to take off about 15-18 years back they did a really nice fajita sauce, and and even better burrito one, it was superb and proper tex mex (not mexican as none of it is like actual mexican food)
