Selling project car. What to write on receipt?

The best thing to do is be honest. Don’t hide anything - highlight faults, potential issues and evidence what you’ve claimed in the ad. The ad description is the most important. Provided you’ve done that you’ll be fine, even if it goes to court which it might given how much it costs to sue someone these days.
All that ‘bought as seen, no warranty” etc, not worth the paper it’s written on. Just be honest, upfront and don’t exaggerate.

The grey area is the fact it is MOT exempt, I maintain it and happy to drive it on the road because I keep an eye on it.
Just wanted to ensure the receipt reflected the fact. I have been very transparent and the vendor has viewed it three times and I have driven him around the block twice.

OP as others have suggested, the wording of the advert is critically important.
If you've sold it via and advert that says (for example) 'Excellent Condition' that's what the buyer will rightfully expect.
It was your advertisement that induced the sale (in part at least) and you can't write anything on the receipt that will allow you to withdraw or alter any of the information that the advert contained.
If you're having second thoughts about whether you're happy to stand by the wording of the advert then the best thing to do might be have a frank convo with the buyer while there's still time.
If you've sold it via and advert that says (for example) 'Excellent Condition' that's what the buyer will rightfully expect.
