phenylalanine is an amino acid, and is part of the sweetener Aspartame. Aspartame is a (very!) short chain peptide (protein) consisting of phenylalanine and aspartic acid. In your stomach aspartame is hydrolysed (by acid or more likely by some enzyme) to make the two constituent amino acids. This is why products with aspartame are labeled "contains a source of phenylalanine". There is a disease (Lois mentioned its name - I've forgotten it) where you are unable to metabolise phenylalanine and so munching it gives you kidney problems/death.
Aspartame is made industrially by using a cleverly modified enzyme that does the reverse of the enzyme in your stomach and stitches the two amino acids together
Interestingly )as with so much chemistry, ASpartame was discovered by mistake when James Schlatter (who was trying to make anti ulcer drugs) made some in his lab. He realised its property of sweetness when he licked his finger
and tasted a sweet taste. This is why I wash my hands about 10 times a day
who knows how many discoveries/poisoning I have averted through this action

Phenylketonuria is the word you were looking for, or just PKU if you prefer!!! It's what we do the heal prick test for on newborns.
