porsche engine in an ultima

since the ultima already uses Porsche's G50 gearbox, I was thinking, (this maybe a silly question) why does nobody use a Porsche flat-6 engine in an ultima?
will it not fit?

A few do, but most don't, typically for some or all of the following reasons.
1: Chassis; The Ultima's engine bay was designed with a Chevy V8 in mind, though practially any V8/V10/V12 of a similar size will fit.
2: Cost; A race prepped Porker engine of similar power to what you can get out of a Chevy will typically cost a lot more.
3: Engine Orientation: A porker engine is in the tail, with the transaxle pointing inwards to the middle of the car, and the geometry of the car is set up for this, while the Ultima is designed for the engine to be in the middle and the transaxle to point to the rear of the car. Basically this means you have to invert the transaxle, because you have it the 'wrong' way round. So unless you want to do lots of chopping, you still need to invert the box if you want to use a porker motor. Unless you feel like pulling your transaxle apart and switching the diff to the other side.
4: Reliablity: Primarily due to it's sheer extra capacity, you can make lots of power from a Chevy, yet expect a reasonable lifespan from the engine parts, simple engine physics. You can plenty of power from a turbo porsche, but, you'll need to put the engine under higher stress loads in order to do so.

Can definately be done, however does prove to be a very costly/time consuming exercise. There are no problems with the engine actually physically fitting it is more to do with mounting points needing to be revised and lots of custom pipe work to be done particulary in a turbo engine.
These guys will actually build you an Ultima with a prosche engine for race use. Their current car us running a N/A GT3RSR engine. But they recently sold one of their cars with a twin turbo GT2 engine with 600hp.

I have looked into doing this project myself but have since decided it is probably not the best idea. I always loved the Porsche/Dauer 962 and this was probably the easiest way to get soemthing close without spending a million+ dollars, but it all got to hard in the planning stages. I still want to get a GTR soon just haven't decided on the engine configuration yet.
