My girlfriend has a Peugeot 107, so basically the same car. She doesn't want to spend any more money than necessary, but if it was mine, the first thing I'd do would be to buy a double din fascia and put a cheap Carplay unit in there.

Also, if you're not aware of it, City Bug Store is a good source of parts and some accessories.

I have been thinking about putting carplay in but feel it could look a bit boxy

Have a Citroen C1 as a second car second citybug store and they’re also on eBay.

I just put the best all season tyres on I could find and updated brake pads and that’s it. I keep meaning to buy the official mats as the ones in there slide.

Keep it simple.

I have put new tyres on Pirelli P1 Cinturato Verde which make a huge difference compared to the old Avon tyres it was originally on.

I soundproofed an Aygo for a family member.
Also fitted a nothing special Sony head unit, which immediately showed the OE speakers up as useless, so swapped the speakers for half decent and also fitted a small under the seat active sub (Pioneer if my memory serves)

Found OE pads and discs wore quickly, fitted Brembo next time and they never needed changing again.

I have looked at upgrading the speakers and can upgrade my front speakers for £35. can't remember what brand they were.

You can buy the same JVC speakers and connectors for less than £20 if you shop around.
For example:

Going from memory here, but those speakers are rated at 21w rms and believe the Sony unit i put in was 45w per channel, so almost certain i found something with better power handling for the dash speakers and again for the doors, recall having to do a bit of hacking of the dash to get them in but you couldn't tell because the grilles covered everything up once in.
