It's supplied with 2 washers.

Which way round do they go or doesn't it matter?

Just like that. The copper should be against the sump

Just out of interest what car is that for?

I’ve not had a drip of a leak in decades from a single aluminium washer even when reused a few times.

A Hyundai.

I've also only had one (copper) washer on other cars hence my question.

I may be wrong but I would suggest that plug has more than one application, if fitted to a steel sump it would use the copper washer and if an alloy sump the alloy washer.
