My Mercedes e350 got a small amount of damage to the front while in Florence, My insurance company wrote it off sadly, as it was a great car, looked new, had full-service history and needed very little work to get it back on the road. They did not even come and see it, just looked at where it was in the middle of covid and paid the normal not very generous amount, and gave me the car.... still in Italy...

I have the car safe in a garage in Italy the question is what to do with it? I told the DVLA in the UK that it is a Cat B write off:

So? is it poss to register it in Italy and put it back on the road in Italy, it is certainly just about £500 worth of second-hand parts and some labour away from being road worthy... I could leave it here save on car hire as I visit often.

Can I sell it for the part and get a decent amount for it, a second-hand engine for one of these goes for a couple of thousand, mine can be seen running etc plus gearbox and white leather interior etc etc

how might I go about this?

Cat B suggests its a bit more serious than £500 and a go with a tin of polish. You're probably better off ebaying it for Spares as a rolling chassis, rather than getting involved in any shenanigans registering it as an RHD Italian car.

Only someone with Italian residency can register a car there. So unless you’re a resident no you can’t.
Your easiest option would be to get it transported back to the UK and sell it on/put it back on the road/part it out here. Trying to do it in Italy from a distance without a good contact there will be tricky and unlikely to be worth bothering with.

It is minor damage, but the question is: can I sell it to someone here in Italy, who could register it and use it? That makes a big difference to the price i might get.

Transport to the UK would cost 1800 in covid times, so It would be better to spend that money on getting it fully on the road .

It is minor damage,
Not if its a Cat B writeoff it isnt biggrin Cat B is when the insurance company asks that the chassis be crushed, to prevent it going back on the road.

Getting that registered in Italy is not cheap or easy. You need your original registration document, a certificate of conformity from Mercedes, and MOT certificate. You pay a tax based on its HP - roughly 4 euro per kW. Then add about 500 for other fees taxes and plates. Like mentioned you can only register a car if you are resident.
TBH you would probable be better off selling it as it is to someone from Eastern Europe.
