Mine has stopped responding to the controls - it has a life of its own, on/off, doesn't respond to fan motor speed selection in manual mode. Its a real pain.
Dealer said "they all do that sir", but my last e46 didn't, neither did the 5.
Is there a sensor or something that I should get replaced or is it more likely that the controller unit is knacked?

It sounds like a resistor pack [a.k.a 'Hedgehog'] they break down and cause erratic fan speed.
If the resistor is faulty the fan speed increases without a change in the digital bargraph display.
If the bargraph display moves up and down in relation to the fan speed then that is normal temperature regulation in 'Auto' mode.
It's located in the right side of the heaterbox foot well area near the bulkhead.

Can't tell you for sure but chances are it's a standard part. Why make several different units that do that same thing?
It'll probably still cost more for a 5 series though
There is one other thing this might be. My Father (bless him, his air con has been troublesome), has had his air con give him more trouble lately. The resistor pack fixed some things but not others. He's now had a new control unit fitted. Refurb costs around £60.
Some of the symptoms you describe could be down to this too.
