They control a huge range of things:
* Diff settings,
* Traction control,
* Radio,
* Pitlane speed limiter
* Brake bias,
* Fuel mappings,
* Engine maps etc.
The layout is down to the driver and how they prefer things to be laid out. Remeber seeing that Ruben's has less buttons on his wheel than Schumacher as he changes fewer things from within the cockpit.

So what your saying is Michael Schumacher is a fussy bar steward?
It's the Canadian grand prix today and I find it amazing that during a race these drivers have time to think about changing anything but there pant.

Yup
Though it amazes me as well that they can think about what setting to change for the up coming corner, hmmm...... approaching a 140MPH corner at nearly 200MPH yes think i'll have a little play with this ere' knob and change the diff and.... yeah that's much better Oh and keep that up for 80 odd mins!!
I'd be happy to hang on the damn wheel and use it change direction let alone type text messages to friends with all those buttons!
www.f1technical.net/article30.html seems to explain things quite well, though the picture on there is from a 2002 Ferrari.
