Looking for some advise, I am picking up a new 911 in a few weeks time with ceramic brakes, what is the recommended bedding process

The same as steels.

not really due to the way a iron disk works, it's nothing like the same, bedding in a iron disk is totally different.

I would not really worry about bedding in the PCCB's they work fully well from new.

That’s what I meant, most people don’t bed in brakes on road cars.
A bit of care for the first few miles then just use them as intended.

for the last 2 sets on my GT3 & RS i have just taken it easy for 100 miles, mostly i try and drive round town with a few A roads

With steel brakes and normal pads, the bedding in process is mainly about transferring pad material onto the disc. It's the interaction of pad material that causes the braking force, the rest of the disc is just there to absorb and dissipate heat. I don't think the same idea applies to PCCB, but I really don't know.
