I know the Sagaris uses a different body and the 4.0 engine rather than the 3.6. But what are the other diffences between the Sagaris and the T350? I’ve read somewhere about the Sagaris having a wider track? Does this mean the suspension and chassis are different?

Chassis is wider, at front and back - about an inch each side.

Lots of info on this on PH if you search :

Same chassis on very late cars with wider pickup points for the wishbone used by Sagaris, though I think this chassis would have only been shared on late 2005/ 2006 T350s/Tuscans etc. Other stuff that's Sags specific are different steering arms and possibly different arbs (maybe due wishbone location). Shocks and spring rates were Sag specific but can be retrofitted (with caveats) to other T cars and sag spring rates not a million miles from those used on some Nitrons.

I’ve just bourght a 350 with some protech shocks as well as a sports exhaust, twin plate clutch and possible twin plate clutch. Aside from the wider track I wonder if it had the 4.0 engine conversion, with around the 400bhp mark, how much different to drive it would be from a Sagaris?

There is around 30-35 BHP difference between a 3.6 and a 4.0S. Real life in terms of BHP, you wont notice it other than on a stopwatch.

4.0S has more torque and you will notice that over a 3.6.

Final drive ratio will help (if ratios are in your favour) with a 3.7 diff making the car feel more lively than a 3.46.
