I understand that some R300's came with individual throttle bodies and some use tthe standard Rover single throttle body set up. Are R300's all equally desirable or is there specification to look out for?

the early ones were indeed the caterham roller throttle bodies, but it was changed for the VVC IIRC. So I think relatively few were on ITBs. That's what I would prefer, but no idea if it's better or carries a premium!

The VVC has a better torque curve , but the RTB version has a more evocative sound and a better underbonnet view which tens to make it more desirable, arguably the VVC should be a little faster.
