Whilst an E91 (Estate/Touring version of E90) will pull over a ton quite happily, when you get up to a ton and a half they are a little on the light side and tend to be affected by passing HGV's etc.
However, it sounds like you want to be moving a fair amount of kit as well at a trailer full of car, and in this case, the E91 may be too small for you - they are not space efficient inside, and you will notice a significant difference from the Vectra.
FYI, on the more powerful versions of the E91's, as the towbar mounting is offset (ball is central), when pulling between 800 and 1200kgs (roughly), and you mash the throttle to overtake dawdlers, this misaligns the back of the car, so when you then ease off (because you may be doing 80mph at this stage), it induces a snake as the car "straightens up". It is something you can manage by easing off gently, but it does concentrate the mind when it happens the first (and second, and third, and fourth....time)
E61 would be my choice, with the 3 litre diesel, but the self levelling suspension at the back can become costly as it's not the most reliable (you can get cheaper non-self levelling replacements though).
