Project/weekend car ideas

Hey guys,
Wanted to start a discussion on possible project cars, I have a reliable daily and was wondering about getting a weekend car and a bit of a project (I don't have a lot of spare time so won't be able to invest much time in it - I just want a car with character and that's fun to drive and take to social meets)
So I've done the mandatory consideration of an Mx5 but also want some other ideas - I've also been considering something like an Opel manta A or B GTE, this was my fathers first car he enjoyed back in the day.
I don't mind suggestions of classics or fun cars that I could take to the track (I live 10 minutes from Rockingham speedway)
Budget is anything up to around £5,000 at the moment, can save more and would preferably be less
I want this to be a good discussion so if you're on the fence about contributing... Do it!
