Mixing Shimano hydraulic brake parts

I have a problem with one of my Zee brakes, lever travel is too long, bled loads it's no good and contributed to me crashing the other day. Had a read online and seems it's a known issue many people claim it's just down to poor bleed other say no, it's an issue. I have 3 Zee brakes across bikes and the two that are ok still have a lot of lever travel but at least they do stop before the lever reaches the bar, anyway more reading and found Jared Graves runs Saint callipers with XTR race levers as he didn't like the travel on the Saint levers - this backs up to me that if a world champs mechanic alters a setup to get round an issue it is a issue not just down to some people not bleding the brakes properly.

So had a Google and you can't seem to buy the model XTR levers he uses any more, so does anyone know what / if there is a current Shimano lever I could swap to to reduce lever travel?

After lots of reading it appears bite point doesn't work on any levers and the lever position adjuster is what buggers the feel of the brakes up. Essentially if you want Zee / Saints callipers and a nice solid none spongy lever you have to wind the lever position to right out so its miles from the bar then the stroke firms up and sponginess disappears. It's not at all ideal as at rest levers are further away from the bar than virtually anyone would want them, however I guess if you ride with one finger permanently on the lever it doesn't matter.
