can't help you with the M3 bit but i've just replaced my pilot sports for eagle f1 gsd3's all round on my 2.8 Z3 and can't recommend them enough. IMO i found the pilot sports un-nerving in the wet, they just seamed to sqirm and twich under acceleration (or it could just be my poor driving ability). i think it's a personal preferance really, it's durability against performace and how deep your pockets are.
'Best' is a subjective view based on your driving preference.
Do you want tyres that last 50,000 miles? Do you want tyres that are brilliant in the wet? Do you want tyres that are very quiet? Do you want tyres with maximum grip?
Overall, the consensus seems to be Michelin Pilot Sport PS2, Continental Sport Contact 2, Pirelli P-Zero Rosso, or Bridgestone RE040/50 (not the run-flat versions).
For out and out grip you can get Michelin Pilot Sport Cup, Pirelli P-Zero C or Corsa, Dunlop D01J, Toyo R888 - all are road-legal track tyres and will last less than 5,000 miles.

I am now on my 2nd set of Goodyear Eagle F1 GS-D3s and find they are excellent all round. Prior to that I ran Bridgestone Potenza SO2s which were also pretty good. I have found the SO3s pretty poor and not in the same class as the SO2s.
