I can hold 700 Watts (seated on a turbo) for about 10-15 seconds. The bread would be barely warm!

Interesting that he chose to go all power and very low cadence. I would've expected a much higher cadence to be more efficient.

Given the grades on toasters are minutes, I set mine to grade 3 for golden brown, I'd be effing miles away, I could probably do 700w for about 90 seconds totally fresh, a light toasting. Probably not on a turbo though.

And the reason for the big gear...that is what he rides on track, he is optimised for that sort of gear.
