Tuning a 105 series engine - rolling roads near Bucks?

I have a '69 1300 GT stepnose and would like to ensure it's running as well as it can be. Are there any recommendations for anyone who could assist within (say) 70 miles of South Bucks? I'd like to set it up on a rolling road using someone who has experience of webers. The car is running on 40 DCOEs with 28mm chokes at present.

I would take it all the way to Dave Walker at Emerald as he really knows his stuff on carbs, but unfortunately, he's all electronic these days.

I know Dave @ Mek Motorsport near Bristol is very good, but it's too far to travel.
