Having made a rash purchase of a '71 Alfa 1750 GTV, I am now in the position of looking for restorers and specialists to get it back to its former glory. Has anyone any website resources / contacts from a similar experience?

I've used Felice at Sunnyside garage for years.
He has a whole workshop just for classic restorations.
Highly recommended. He recently had a GTAm replica sent to Japan!

Nice one, I've seen that one advertised for a while now. It looks like a very valid project, not a basket case like so many being pedalled on eBay recently.
As rick said, Ian Ellis or MGS are certainly worth talking too, though you will be looking at five figure sum. It will be worth it though, these are lovely cars in all respects and the market has started to recognise that now.

That carpet is rather magical. After reviewing what Alfaholics can do, I'm having my head turned by a GTA Replica type of thing. What do people think of these? They look the business and I'm assuming with these cars the whole matching numbers / original spec thing is not as important as some other marques?
If you want someone who has real depth of knowledge about what you can and can't do and the real world differences the specification choices will make then you can't do any better than Simon Whiting at Gran Turismo Engineering.
He doesn't have flash premises and has the slightly madcap 'doc brown' appearance, nor will things necessarily happen exactly when you were told they would, but your car will have had the most meticulous attention and the unerring eye of a maniacal perfectionist on it from start to finish.
He rebuilt my car's engine with the delicacy of a watchmaker and it's now….amazing.

Please don't go for a 75twinspark conversion, too many 75s being butchered for this. You have a lovely engine.
The largest joy of these cars is the sweetness of the drive.
My advice, go drive as many as you can in different flavours, before diving into a decision. If your in Suffolk your welcome to try mine.

Homework done and decision made - she's off to MGS coachworks in January restore to original spec for exterior and interior and rebuild engine on existing block but with some extra trickery to be decided, uprate springs / dampers etc to sports spec so it looks beautiful but rides and goes slightly better. No track specific kit / roll cages or any other nonsense, strictly high days and holidays! Thanks for the generosity of various people who offered advice and runs in their various cars, I'll be joining the owners club so can see more of these lovely cars and hopefully mine will join them in a few months or years...

LSD, bigger front ARB and a decent set of springs and dampers are what you need.
Probably GTA replica wheels too, but keep a high sidewall for the traditional look.
