I've got a Boardman hybrid with 700 wheels, would a set of 26" wheels with discs attached fit if I was to buy a set?

They'd fit hubs-wise, but the geometry will be all to cock (i.e. it'll ride like a bag of ass) and have less ground/pedal clearance.

Why would you want to anyway?

If it's because you want to go off road - you need some 29er or CX 700c wheels.
