Cycling weekend in France

My wife and I are looking to have a long weekend in France towards late August, a weekend of pleasant 50-60 mile rides, good food and better drink.

I'm thinking the Champagne region would be a pretty good bet, far enough south to feel suitably French, not ridiculously far from Calais and of course Champagne every where you go!

Not looking for an Alpine style challenge, perfectly happy with smooth rolling roads and no climbing

I believe there is a marked Champagne trail? It's a fairly level part of France, so I wouldn't worry overly about the hills

Foot passenger + cycle on Newhaven-Dieppe is £37.50 return. Bike there over 2 days, overnight or 2 in Paris, train back.
