As per the title, any recommendations for where to drink and chat (as opposed to drink and dance) after normal pub closing time (11:30 is it?) on a Saturday night?

Save me from 'Espionage'!!

(anywhere in City centre will be fine)

Cheers.

I'm not sure what time it shuts exactly but I've been in the Slug and Lettuce until late o'clock before, think it depends on how busy it is and what sort of "clinetele" is in.
There are a few pubs on Niddry street that are worth a look too, never been into Bank (looks a bit posh for me tongue out), Nicol Edwards bar (could have a different name these days) was good, had lots of little coves/rooms that were turned into booths and Whistlebinkies is good if you can get into one of the little rooms they have.

Nicol Edwards just down from the royal mile (hope it's still there- known as Edinburgh's most haunted pub. Plenty of spirits in there...)

Gillie Dubh opposite Frasers is open until 3am IIRC - not too bad if you can get a spot around the back in the seated alcoves.

Nichol Edwards is under new management, and new name but still pretty much the same last time I was in...cracking bar, has live music etc..

Think most of the pubs in Stockbridge (St.Stevens street) are open until 3 at the weekend...
