Body work advice needed.

I'm going to do a full paint restoration on a good clean 911, theres no rust or physical bodywork needed, whats your experience of dipping and recoating or grit blasting and primingbefore painting. This is particularly relevent on a 911 as I understand that the original panels are zink coated and I would like to keep this if poss.
