Bugger. Doing Turkey, Ham and Duck tomorrow but decided to make life a bit easier for myself and do the ham tonight.

Ready now but obviously it's far too hot to put in the fridge just now, we'll be going to bed in an hour or so...

Put it in the other oven overnight and in the fridge in the morning? Any other suggestions?

Let it cool to room temperature, then refrigerate. Yeah, bung it in the oven. Sling it in the fridge tomorrow.

Wrap it in foil and leave it on the side to cool down overnight.

I have not done the course (yet) but against everything said here I would want to cool this down as quickly as possible.

So put it in the freezer for three hours (assuming its a big ham) and then deal with it.

Unless you have uncredulously small appliances you should be OK

For those of us not doing the course, could you please explain why you'd want to cool it quickly?

Bad bugs grow and multiply at a certain temperature, the best temerature for these bugs is what we know as warm.


Food safety appears to be a lot like first aid, alwats changing, and once upon a time it was advised to cool the food down outside of the fridge, so as not to warm the chilled food in the fridge, but I believe times have changed and the advice is to get cool asap.

Unless you have an industrial type freezer that's madness.

I know, I am one crazy Mofo silly

You be happy with your meat on the side overnight, I will reduce the temperature of my meat to a safe level quickly..

( by the way, I did not mention oven hot, you invented that, I said 'warm' )

I'm on the cool as quickly as possible camp here. I would have put the ham in a dish, and then put that dish inside a larger dish filled with water and ice, then cover the whole lot in foil and leave for the hour before bed and then straight into the fridge when going to bed. Failing that, cover it and put it on the garage/shed/basement floor where it can cool and not be eaten by animals. My friend is a chef, they put food to cool in the basement all the time.

Well, no-one died and nobody has the sts yet.

Left it in the (cold) utility room for an hour then put it in the beer fridge whilst still warm (after moving the beer into the "other" fridge.

I had exactly the same issue on Xmas eve, the 6kg ham came out the oven at about midnight, couldn't put it in the fridge etc and I was knackered so I wrapped it in foil and left it in the (still hot but switched off) oven overnight.

Was still warm this morning so got it out and put it in the fridge about 11am.

Still alive at the moment, however I may wake up tomorrow dead :-s
