A Highland Park 15 or 18 is a very nice place to start IMO.
Johnnie Walker Green or Double Black always goes down well with friends who are starting out on their scotch journey (albeit the JW's aren't single malts).
Something smokey from the likes of Laphroig or Ardbeg can be fabulous but are an acquired taste especially if you are coming from a sweeter bourbon.

For a malt, I'd recommend a glenkinchie as a starter. Failing that, a bushmills malt. Ok it's an Irish whiskey and not a scotch whisky but still.
