Damn, Couldn't get a Turkey as they had sold out (I was hoping that anyway). So got a nice free range chicken, pork joint and....a pheasant.

Never cooked it before....

1. Will it go with my Christmas dinner?
2. How does one cook it without drying it out to death?

Thanks for that.

I think I'm tempted to try something in the slow cooker and use it as a starter now.

Try boning both the chicken and pheasant, then roll one inside the other ballotine-stylee:

Went on a butchery course a few weeks back to learn how to do just that.

You're not wrong there hehe

I rely heavily on mushroom stuffing and bacon to either 'pad out', or 'hide' my mistakes.

A good slew of chopped herbs on top of the dish before carving also works wonders smile

I've a pheasant to gut and cook boxing day smile
cook breast down in a roasting dish for 1 hour at 180C or 160 in a fan oven.
I use an overripe granny Smith to keep it moist and 3 segments of said apple to make a triangle to keep the bird from toppling over. mash the apple bits at thye end to make a great gravy.
