Christmas Ideas please - unattended cooking

What do you mean it's Christmas day in a couple of days?
Oh heck, perhaps I'd better do some shopping tomorrow then,
Can I have some inspiration for Christmas Day please?
The trouble is, we need to leave the house in the morning - go to the Mother-In-Law, then to collect my Mum and get her back to ours where a meal will be ready in relatively short order in the late afternoon. Leave at 10, back at 3, eat at 4 sort of thing.
So I need something I can bang in before we leave to return maybe 5 hours later. Or that can be slowcooked.
Any ideas please, most welcomed!
Last year I did a gammon joint in the slow cooker, the year before, a slow cooked leg of lamb in the oven but don't want to repeat myself.
I've had a request for my home made leek & Potato soup to start so that's easy but looking for ideas to get round my timing dilemma!
