Hi guys,

I have the family coming round later for Fajitas, an old family favorite. However we always use chicken and for a change I have bought some Sirloin Steak to try as well. I have made red pepper, chilli and garlic type dish with a real kick which is currently maranading, but how is the best way to cook it?Quick flash in a really hot wok, or slow fry in a pan to soften all the chilli and peppers to get the flavour out? Or, fire up the slow cooker, which would work well for me today?

I have found the best way is to marinade it however you please but to leave it as a steak for cooking.
When cooked, then slice it up so it's all nice and moist.

If you pre slice it, it tends (well for me anyway) to overcook and dry out, thus getting a bit tough and stringy.

As above, stir fry the veg separately then cook the steak in a griddle pan, rest, slice and combine with the veg as it goes to the table. I always found it difficult to judge the cooking time of the veg and meat when combined without overcooking the steak so separate for me is best!

Ok, just flash fry it and don't over cook.
