What do you chill out to? I seem to recall "Chillout" became a bit of a dirty word in the early 2000s due to a load of watery Zero-7esque offerings knocking about, often in the form of incredibly dull compilation albums. However, I have a few favourite tracks at the moment that I very much enjoy relaxing with, and would like to share with you. 
Currently on my playlist I have:
Synkro - Viewpoint I can't get enough of this one. Reminds me of my pirate radio days.
Author - Turn Just recently discovered this album. Really classy, ambient Dubstep, with some loooooovely sax!
Lung - Why Does Anyone Ever Do Anything This one just has a nice vibe about it.
Fliptrix - Deep Set Thoughts This dude seems to release a new album every month. Everything he does absolutely kills it.
Discolsure - Latch No doubt alot of you will have heard this. I've been digging their stuff for a year or so now but I reckon this track is a massive step up for them.
Aaaaaand finally...
The Hidden Orchestra - Seven Hunters Very much along the lines of the Cinematic Orchestra, as the name probably suggests, but very very decent all the same.

Take a look here http://astrangelyisolatedplace.com/ All manner of downtempo stuff in all its many guises and many of the mixes are stunning imho. Most of them can be downloaded, they're free and there's also an iPod app which allows you stream them to your iPod/Pad etc.

Pretty much anything by Synkro is pure gold. Especially Everybody Knows (can't find a full version on YouTube). My play count for this track in iTunes is in the hundreds.Eleven Tigers - Stableface is also one of my favourite chill out tracks.
