blue stilton and celery soup:

2 tablespoons margarine
1 onion, thinly sliced
100g celery chopped
1 litre water
100g Stilton cheese, crumbed and divided
4 sprigs watercress, for garnish

Do soupy boiling and blend... hey presto fantastic soup.

My other favourite is salmon, potato and cheese soup but I cant find a UK substitute for the finnish cheese I normally use.

Parsnip and sweet potato:

6 parsnips
2 sweet potatoes
4 onions
between half and 2 birdseye chillies (or whatever is about) for heat
1TBSP curry powder
Stock of your choice to cover it
salt at end as stock may provide enough

Fry onion in oil and add curry powder and chilli, add peeled parsnip and sweet potato cubed, cover with stock and either pressure cook or simmer till soft.

Blitz it and stir in an (optional pot of creme fraiche).

Serve with rolls or parmesan crisps if you are feeling flash
