What bird will you be stuffing for Christmas?

As my first ever post to the cooking part of the forum I wondered what everybody would be doing this Christmas?
Personally as I have a small family I always tend towards a Guinea Fowl. It's sort of like a chicken with a bit more of a game like taste plus the advantage of bigger legs so more dark meat and less breast.
I'm not one for breast. I like the skin and the more greasy bits.
On the other hand, a proper pork joint with crackling might be a good alternative.

It'll be curry goat, baked salmon and possibly a roast chicken this year. I might throw in some ackee and saltfish if there are enough people wanting it. Or better yet I'll sweet talk my mum in to making saltfish fritters mmmmmmmmmmmmm. She's going to storm into the kitchen demanding to help anyway.
