I unfortunately got a parking ticket today in Edinburgh, Stockbridge.

I paid for 2 hours by the machine and displayed the ticket in the passenger window (facing the pavement) we went into the bar to get some food sat down and quickly noticed the traffic warden putting a ticket under my windscreen wiper, I quickly ran out and asked what he was doing. He was fairly blunt and said that this isn't parking for pay and display. I said that it's not clear as there is 2 signs pointing out 'Pay and Display' then he just said its the highway code. I asked how much the fine was and he said £60 (although it says £30 on the ticket)

This brings me onto the below I genuinely paid thinking I was legally parked. Where I parked there was a silver pole with no sign on it, just a pole. Round the corner and the same type of road with a single yellow has the same type of pole but has huge signs clearing showing that this no parking is allowed between the hours of etc. I have pictured this and have shown below.

I was looking for advice to see if it is worth appealing due to the above. Also I could see the car from where I was sitting and no way did he wait 6 minutes before giving me the ticket as the minute I seen him looking at my car I was out there, so he didn’t wait just gave me the ticket. Bit miffed as I genuinely didn’t mean it, the guy was rude and sick of the council seeking money anyway possible.

The 'default' yellow line is as per the above sign (Mon-Sat...).
So if no sign as in your case, this would have applied anyway.
Unless there was another sign (larger no parking sign) before the whole area, which according to the highway code applies to the yellow line, although many councils use it for parking restrictions only(!).

looking at this picture, is it not common sense that the ticket you bought only applies to the marked parking bays in the foreground and further up the road?

if you were outside one of these bays the ticket you bought means nothing and normal yellow line rules apply so you got a ticket

I'm in a similar situation at the moment. I was parked on a single yellow with no signs anywhere in sight. Plenty of other cars were parked there so I thought why not? I was gone for ten minutes and returned to a PCN. Now here's the kicker, not one other car along that street, including cars parked on double yellows and in loading areas didn't get a ticket. I suspected that they may be blue badge holders but after a walk up and down the street I confirmed there were absolutely none in sight. I've appealed the parking notice and questioned why I was given a PCN while everyone else that day got nothing. Though it was in Hexham so I suspect it's because I'm not from around there.

Parked on yellow line despite clear bay markings.... Errrr, no chance.

Probably, my experience is that everyone in Hexham knows everyone else, so yeah your car would have stood out like a sore thumb to the warden.
