One day in Bangkok....

It's certainly possible, as long as your ticket allows you to leave the airport.
Get the sky rail into the city.
A good suggestion is to use the sky train in the city. Cheap, clean, safe and easy to navigate. There are 2 lines that effectively go north-south, east-west. Just get off when you see something interesting.
I wouldn't bother with a shopping centre - I can do that pretty much anywhere.
Get to the river, charter a long tail boat for an hour and keep throwing money at the driver - those V8 outboards can be pretty lively!
If it's a weekend, try Chatuchak; although it's a bit of a trek.
A good roof top bar for lunch/drinks.
For culture, consider the Royal Palace, Jim Thompsons or the big Wats on the river.
Street food and proper Thai food courts are great experiences.
Have fun.

It may mean that you need to collect your bags and get them to left luggage.
If you are routed straight through (CIQ), you won't be allowed out of the transit areas of the airport.
Your timings seem very unconnected, so you may well be able to do as you are hoping.
You also need to bear in mind, the fact that clearing the airport can take a while. Immigration and baggage reclaim, followed by finding a left luggage location. Then at the other end of the trip into BKK, you will have to go through all the national exit procedure formalities, security, exit Immigration etc etc. You may also incur an additional departure tax, as you look like a new passenger, as opposed to one in transit.
The more I look at you timings, the less appealing the day trip into the city actually looks.
Arrival 0820, so lets say, get to the gate, arrival formalities, baggage reclaim, left luggage, train....lets say you finally get into the city by 1030-1100 hrs.
For an international departure, you will need to be at the airport 3 hours before. Therefore 1650, which means startting your journey back from the city around 1600 Hrs.
To be honest, it looks like a lot of hassle to me, for 6 hours in a city, which only really comes into its own after dark.
Consider a room at the airport hotel instaed. Louis Tavern do day rooms. You can sleep, eat, watch the TV etc., in comfort.
Hmmmm.
