U.k/Jersey etc one night, unusual stuff to do?

Wed anniversary coming up mid June, and we fancy something other than the usual spa break.So we need a 2 day/1 night place good quality hotel,but with a few different things to do, something unusual and completely different from the norm.Pref 2/3 hours maximum from Essex
All help appreciated as the pressure is on me big time!
