The only part of your question which I can sensibly answer is this: You should be able to get a 'master link', which is what all bikes used to have before derailleurs.
Assemble with the closed section of the piece in the front of the pic facing the direction of chain travel.
Izumi use a nut and bolt fixing on their tough chains, I could only find a pic of a half link version

I've had 10,000 miles out of one of their chains, KMC are pretty good too, oil regularly and WD40 spray after every wet ride, remove and wash in diesel once a month and soak in engine oil wipe clean before fitting back on.
I save the diesel out of old fuel filters in a drum for that

Just buy kmc chain. Has quick link built in and can be used many times.
Can't help much on the gearing. Everyone is different. Have a look at this, obviously less gear inches is an easier gear. Should help in picking the right one based on your previous issue http://www.wmrc.org/downloads/gearchart.pdf

42 x 16 is about 69-70" depending on tyre size
48 x 15 is about 84-86" gear
If you change the sprocket to an 18 that will bring you back down to 70-72" gear or a 17 slightly higher 74-76"
