Evening all,

I have been getting back in to cooking simple, healthier meals. The only issue is that I'm just not enjoying chicken etc anymore - it's become tasteless. Same with a lot of vegetables & salad - they seem bland.

Strangely if I eat out I'll devour the side salads & think they are gorgeous but I just can't seem to recreate this at home.

So to help a relative simpleton in the kitchen & to help me inject some flavour into my poultry can you recommend good, simple, marinades & dressings?

Try this marinade for chicken, especially on the BBQ. It seems odd but really works:

200 ml olive oil
1 tbs smoked paprika
1 tsp chopped fresh rosemary
1 onion, grated
1 tsp salt

Mix well and marinate overnight. Cut slots in the meat, and push the marinade well in.

Fresh Rosemary... Will dried do? Or do I need to run away from an MC shouting heathen at me?!

Will give that a go this weekend, thank you.

Garry, I've seen these & will no doubt try a few but I have a cupboard full of herbs & a few oils & vinegars so it seems a shame not to learn how to do a few marinades & dressings myself smile.

Dried should work. The main flavour comes from the smoked paprika and onion.

Fish sauce, lots of chilli, lime juice, bit of pepper and a pinch of sugar.

Fish sauce is a new one on me, will try search it out.

Thanks for the ideas so far - will try both at the weekend.

How do you guys tend to cook your chicken?

Don't try fish sauce on its own, in fact don't even smell it! But it will taste nice!

I'd roast it, grilling dries it out.

You good also just heat up some sesame oil till it smokes and pour it over your salad.

Or mix the heated oil with a bit of honey, rice vinegar, soy sauce and some lemon juice

I use the same one for salads, but with honey instead of sugar

Cook a steak rare, slice it and marinade in this overnight. I know it sounds minging but it works! They use a similar method for Thai steak salads

I have a rather complex one that involves

Pepper,
Onion powder,
Paprika
Cayenne pepper,
Salt,
Brown sugar,
Mustard (equal parts English, Dijon, american)
ketchup
Worcestershire
Honey
Cider vinager

Mix to a thick paste, taste to slightly too spicy / sharp ( flavor matures)

Smear over racks of ribs and BBQ at low heat for 5 hours .... Slow but tastes fantastic.

Even better if you have a smoker, do with hickory or mesquite.

Only this seems strange - Rosemary with chicken?

Rosemary is very easy to grow, the key is well drained soil (add gravel and sand) or a large pot - but also trim it/harvest it regularly - it becomes woody and diseased unless you trim it every year.

Chilli, ginger, lime juice, garlic, sesame oil (God's creation), soy and some honey.

Grill some chicken with that, some rice and some pak choi done in oyster sauce and ginger. Job's a goodun. smile
