Add as much ginger and garlic as you like - you can't go wrong. Takes about an hour and a bit to poach the chicken.

Only special ingredient is Sriracha sauce - you'll need an Asian grocers for that, probably.

Depends how lazy I'm being.Maybe a wee bit of soy sauce to taste?
If I'm being lazy I'll season it with Rajah chicken seasoning, wrap the breast in foil and cook it in the oven at 190c (mins a fan assisted gas oven) for 20 mins in the foil and 5 mins with the foil open.
If I can be arsed I'll season it as above, then put a bit of olive oil in a pan and pan roast it.
Soy sauce would work, but it may overpower the dish with salt if you add a stock cube to the rice

I had to write the recipe for someone so here it is..
Poached Chicken Thighs in Lemongrass with Chilli, Garlic & Ginger Soya Sauce Served with Chicken Rice.
Broth
Big pan of Water
Chopped Onion
A Few Bashed/Bruised Lemongrass Stalks cut in two
Cup of Fish Sauce
Half a Dozen Chicken Thighs
Sauce
60ml Fresh Lime juice
60ml Light Soya-sauce
60gms Sugar
Equal amounts of
Chopped Garlic
Chopped Ginger
Chopped Chilli
Coriander
Fragrant Thai Rice
Prepare a big pan of water, put in chopped onion, lemongrass, fish sauce and chicken thighs, bring to boil and simmer for 90+ mins.
Strain off all the gubbins and replace thighs back in pan with broth, extract enough broth to use a substitute for water in the rice cooker,
simmer the remaining broth and all chicken on lowest heat to keep warm, meanwhile cook rice.
Make sauce by combining lime-juice, soya and sugar, stir to blend, add other chopped ingredients.
Serve with rice, pour small amount of broth on rice, place chicken (sans skin if you prefer) on rice and dress with sauce and coriander.

Did this last night for the missus.
Chopped up a few chicken legs, cleaned and threw in a bowl of vinegar and water to soak for a few minutes.
Heat up a pan and then add oil for a shallow fry.
Chopped up a half onion and some garlic and put in a second bowl with some salt, all purpose seasoning, curry powder, sugar, browning sauce and a touch of ketchup. Could use proper tomatoes but I tend to do this when in a rush.
Wash the soaked chicken and then add to the seasoned bowl and mix for a minute or so.
Add to the now hot oil and fry till all sides are coated and browning nicely.
Add a touch of water to the leftover season mix so it makes a stock of sorts. Add this to the chicken till it creates a sort of stew.
Cook white rice.
Eat when done.
30/40 Mins max.
