Cooked a huge slab of beef rib yesterday and have loads left over apart from cold meat and chips does anyone have any good recipes for leftover meat?

Plus do a homemade BBQ Pizza by using BBQ sauce, Peppers, Onion & Mushrooms with the Beef.

Or for lunch use Tortilla wraps with sliced Peppers, Onion, Mayo and a small squirt of BBQ sauce.

I like BBQ sauce case you never noticed hehe

Ragu it. Follow the usual method of onions, carrots, celery, herbs, garlic, passata and stock to make the base then throw in the left over meet and simmer.

thai beef salad.

Salad is easy.

chop up

lots of shallots or onions
2 or 3 stalks of lemongrass, peel first layers off, then slice really thinly.
3 or 4 chillis slice thinly ( keep seeds in.. don't be a poof )
cpl of bits of celery
half a dozen cherry tomatoes quartered
lots of torn up mint
lots of torn up coriander
( or a bowl of mixed garden leaf salad, rocket, etc.. )

make a dressing a cupful.
1/3 fish sauce
2/3 limejuice
splash sesame oil
chopped garlic.

slice beef thinly

mix everything together and eat.

I like the sound of that salad.

Am I right in thinking that you don't need very much of the dressing?

quite a bit.. you want the dressing to cover it, I find a good cupful works

I was thinking that with a third fish sauce, it's going to end up pretty darn fishy. That stuff is pungent!

yup the lime juice does a good job of tempering it, I would taste it before you splosh it on and adjust if its too salty.. you can add a tiny bit of palm sugar to take the edge off as well.

Marinating the chillies in it with a few slices of garlic for an hour or so can make it even better
