Just now.
An absolute dream. I really didn't want it to end.

Normal frozen steak from Makro, nicely marbled, seasoned with a bit of rock salt and pepper earlier in the day then cooked on unglazed quarry tiles. So juicy and tender. Mmmm.


That's all really, just felt like sharing.

Sorry, I didn't really think it was going to be that good until I took a bite, and by then it didn't even occur to me to take a photo until it was all gone, and I posted this in a happy postprandial daze.

Best one I've done was last week. (after lots of dissappointments!)

Griddle cast iron pan on high (smoking)
Steaks left out of fridge for 40mins
Rock salt, pepper and olive oil rubbed onto steaks
Steaks in pan & left alone
Didn't time them, turned them over probably about 4 mins
So about 4 mins on each side
Put on a warm plate, loose tin foil to cover them and left them for about 10mins
Beautiful!!

How do PH'ers do yours??

I'm almost exactly the same, except the meat is left out for an hour and I baste the skillet with groundnut oil. 3 minutes on one side, 2.5 minutes on the other and covered for a few minutes leaves it absolutely perfect.

Served with a shallot and peppercorn sauce and double-fried chips (when I can be arsed); pure sex.

Anyone order their meat online? Some excellent cuts at reasonable prices, much better stuff than the local butchers.

Steak isn't often bought in our house, but found myself in possession of a lump of sirloin thanks to a mother in law concerned for my health.

Hot pan with foaming butter. Steak sizzled for about 3-4 minutes each side and 4-5 minutes to rest.

Shared as a supper with MrsCjelli with buttered white bread as steak sandwiches.

Medium rare, and as tender as could be.

Need to get more steak in.

Almost the same except the pan also gets oil, salt and pepper. I make a pepper source wih finely chopped shallots, green peppercorns, cognac, red wine and cream. The pan also gets deglazed with a glug of red wine which is then added to the sauce.

Always buy a big slab of rib eye steak from Makro in prep for my summer BBQ's. Really very good quality. No really, it is!

Flank steak (also known as 'bavette') - £6.99/Kg from Costco.

This has a lovely open texture that's simply delicious marinated and chargrilled rare.

My younger brother, surprisingly, cooked the best steak I've ever had the other week.

Take a nice rib-eye, bash it about a good bit to tenderise it.
Rub into it a Knorr 'Dark' Beef Stock Pot, half on each side of the steak. I've tried a variation since, it has to be this one.
Also rub into it some crushed fresh garlic, rock salt and pepper. Leave it to marinate overnight.
Hot skillet pan in the AGA for an hour or so, take it out and lash it on the top hot plate, 3-4 minutes each side to leave it nice and rare in the middle. Unbelievably tender, gorgeous flavour!

Yum, yum lick Intro pack arrived on Tuesday and I've had a chance to try the bangers and the steaks - luvverly - obviously in the intro/discount pack you get the smallest size steaks (Mrs Deadslow and I do enjoy a BIG, THICK steak, so we'd order the max size cut), but taste was genuinely super. Good recommendation. Thanks thumbup
