Ravioli - Need some ideas

Hello folks,

Got a day off today so have time to make a bit of pasta dough and thinking I'll use half of it to do ravioli tonight.

So for those who've made it before what are you best fillings? Ideally vegetarian, but might make a few meaty ones for me as well smile

Walnut and stilton went down very well last time lick

Have tried pine nut, ricotta and basil in ravioli and that was very nice.

I can imagine that butternut squash would be nice as well.

For ravioli I think vegetarian fillings are easier and possibly better (and I'm a carnivore!)

Pine nut/riccota/basil sounds like a good shout. Perhaps I'll just do a bit of chorizo on the side to satisfy my meat cravings smile

We did a Butternut Squash Ravioli and it was delicious!!

Nice thoughts, in the end went with ingredients that were (for the most part) already around. Had wild mushroom and hazelnut from this recipe (worked great)

Though I made a white wine and wild garlic sauce, after realising the wild garlic is up again (woohoo!!!) smile

Will be making more, butternut and riccota based ravioli will be next time.

As a sidenote they didn't stick together very well, usually just use a bit of water but this time used beaten egg and it just didn't hold the pasta together properly frown

I had lobster ravioli in a creamy ginger sauce once and it was pretty spectacular, and no reason why you couldn't easily use crab instead

Try a simple one. Sage Ravioli, with a light butter sauce.

Its an Italian classic, plenty of flavour, and nice and light.

Try replacing some whole eggs ie instead of 4 whole eggs, use 3 whole eggs and 2 yolks in the pasta.

Makes a beautiful pasta. On the filling, put what the other halfs favorate ingredients are in them. No good us lot telliny you to put cheese, if she hates it. HTH.

That way you have some ingredients to make CSV for another day. (sorry about that
last sentance).

I've eaten sea urchin ravioli in Corsica.

They use the orange roes of the creature which are a bit like the corals on scallops.

Delicious. If I lived anywhere near a rocky coastline I'd go out hunting for these.

If I lived somewhere like Cornwall or West Wales I'd be laughing. Unfortunately my nearest possible sea urchin habitat is Brighton, where the sea is filthy. You'd have better luck fishing for condoms there.

Although I might have a go at River Mole crayfish ravioli once my 2012 trapping licence comes through. smile Bit of dill butter on them. Nommy.
