Is this the orangey part? i don't know why but i always thought it was not good for you / not edible.
After all this time of just thinking i was right and getting rid of it, i find out it's just roe.

One thing I've done is to pull it off by hand - no knife - then cut off the membrane that comes away with it and pass the cleaned coral through a sieve and use it to make a mousseline. This is served in a cleaned shell with a little lumpfish roe and lemon zest. The scallops themselves are pan roasted and served on a horseradish cream.

I also think it's the best bit of the scallop and am somewhat disappointed that it's not left on as IMO it's far tastier than the scallop itself, although if it's mixed into a sauce that's served with it that's ok
