Can you make a cheese sauce?

If so, boil new potatoes, drain & set aside.

Dice up bacon & cook until crispy in a pan. Take the bacon out and keep the fat, make the cheese sauce in the same pan, then put bacon and potatoes in there, turn it all out into an oven proof dish, and pop it in the over / under the grill until a crispy crust has formed.

Devour with crusty bread...

I would boil spuds then slice when almost cooked through. Take off the boil and drain. Chop bacon into small pieces and start to fry, then lob sliced spuds in with the bacon et viola.

wink - I did think of that, but wasn't sure if it was "inspirational" enough for the OP... wink

How about a bacon rosti?

Grate the spuds, squeeze the water out and fry in bacon fat & serve with bacon...

So chopped up bacon and sautéed potatoes?

Cut the bacon into lardons and fry it off.

Cut the potatoes into small dice and fry them in the bacon fat. Do the same with an onion.

Crack a couple of eggs over, some cheese on top, and shove it under a hot grill until the cheese bubbles.
