Pinnacle Neon One - any views

I am looking for a bike to start riding to the station (2 miles) and some weekend riding with kids or on my own. This Neon thingy has taken my eye but wondering if the following will be issues:

1) The tyres are 700/25c, would this be too thin and only road suitable? I wouldn't mind the occasional park pathway type riding, but not serious mountain biking stuff.

2) It is a 7 speed - would this be too low? I don't really see the point of 21 gears, in my last MTB I never used more than 7-10 or so.

It is quite light and as I will be locking it at the station I don't mind it not having disc brakes and "bouncy" suspension.

Looks an excellent very logically specced commuter bike for the price and I'd be very surprised if you couldn't fit 32c cross tyres. Can't think of anything better for anywhere near that price and I've built quite a few 9 speed hybrids for people that weren't dissimilar to this.

This is an answer on the website about fitting wider tyres:

The Neon is designed with plenty of tyre clearance and tyres up to 35c should fit easily in the Neon One. Any larger and removal of the wheels may become problematic (in regards to the tyres clearing the v-brakes).
