Cooking something other than...

Now as some of you are aware, my cooking skillz are somewhat limited, I have burnt lettuce before now. My Pizza & toast are the stuff of legends 
Whilst I was in Libya I lived, for 2 years, on cornflakes, cheese butties, crips, takeout and the occasional pasta dish.
Now I am in Dubai, I am still limited to what I can cook more due to the fact I don't have much equipment, stuff is seasonal (and expensive unless its crap) and I really CBA when I get in.
Oh and the other thing is I am a veggie - so chicken/meat/fish is OUT and hence my addiction to cheese
but I get bored of food very easily.
So..anyone able to help me out..?
And one last thing, the temperature is due to get very hot and very humid very soon - so need something easy, cooling and won't take a lot of effort or heat to cook.

Without knowing what sort of ingredients you can get out there, how about something like a sweet potato and spinach curry or a red pepper and goats cheese risotto?

The curry idea sounds great for now when its only 70f - but when it hits the wrong side of 100F and has 90% humidity then not so much

I think Chinese and Indian are the way to go if you want interesting meals, a lot of their cooking has developed around the lack of / cost of meat and with a lot of dishes it can simply be left out. The majority of India is completely vegetarian. Perhaps invest in a couple of cook books and see if you can get hold of any of the stuff in it. Also, helpfully, Chinese and Indian cooking just involves chucking things in a pan for a while, nothing massively complicated.

30 years? Maybe you've just forgotten how good it is?
Buy a THai cook book Thai food doesn't often have much meat in it and is very nice, its not all blow your mind hot either we had a very nice Thai Chicken Chowder that wouldn't make a difference if you took the chicken out it was basically Thai Green paste, Coconut milk, sweetcorn, Spring Onions you could replace the chicken with any other veg really took 10 mins to cook very very easy.

couscous made up with orange juice, pomegranete seeds, grated orange peel, cranberries, anything you like really
